Description

  • 2 cups all-purpose flour (for waffles)
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/3 cup melted butter
  • 1/4 cup green scallions, finely chopped
  • 1 tablespoon sesame oil
  • 1/4 cup gochujang (for glaze)
  • 3 tablespoons honey
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil (for glaze)
  • 1 teaspoon fresh ginger, grated (for glaze)
  • 2 tablespoons sesame seeds (for garnish)
  • 3 scallions, sliced thin (for garnish)
  • Pickled radish or cucumber (optional)

Instructions

  1. Marinate the chicken by mixing buttermilk, 2 tablespoons gochujang, garlic, ginger, and soy sauce. Add chicken, coat, and refrigerate for at least 2 hours.
  2. Prepare the coating by whisking flour, cornstarch, gochugaru, salt, and black pepper in a bowl.
  3. Heat vegetable oil in a deep fryer to 350°F (175°C).
  4. Coat the marinated chicken in the flour mixture, ensuring it adheres well.
  5. Fry the chicken in batches for 8-10 minutes until golden brown, then transfer to a wire rack.
  6. Double fry the chicken for 2-3 minutes for extra crispiness.
  7. For the waffles, whisk together flour, sugar, baking powder, and salt in a bowl.
  8. In another bowl, mix eggs, milk, melted butter, and sesame oil. Combine wet and dry ingredients, then fold in scallions.
  9. Cook waffles in a preheated waffle iron until golden brown.
  10. For the glaze, whisk together gochujang, honey, rice vinegar, soy sauce, garlic, sesame oil, and ginger in a saucepan. Heat until it thickens slightly.
  11. Glaze the warm chicken and serve over the waffles, garnishing with sesame seeds and scallions.

Notes

Double-frying the chicken is essential for the perfect crispy texture. Adjust gochujang to taste based on your heat preference.
