Ingredients

Scale
  • 2 lbs boneless, skinless chicken thighs, cut into slider-sized pieces
  • 1 cup buttermilk
  • 1 tablespoon hot sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups all-purpose flour
  • 1 cup cornstarch
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon cayenne pepper
  • ½ teaspoon black pepper
  • 12 slider buns, split and toasted
  • ½ cup mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 12 pickle slices
  • 2 cups coleslaw mix
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • 6 cups vegetable oil (for deep frying)

Instructions

  1. Marinate the Chicken: Combine buttermilk, hot sauce, garlic powder, onion powder, paprika, salt, and pepper in a large bowl, add chicken pieces, and marinate for at least 30 minutes.
  2. Prepare the Breading Station: Mix flour, cornstarch, paprika, garlic powder, onion powder, thyme, salt, cayenne, and black pepper in a shallow dish.
  3. Make the Slider Sauce: Whisk mayo, honey, and Dijon mustard in a small bowl until smooth.
  4. Prepare the Quick Coleslaw: Combine coleslaw mix with apple cider vinegar, sugar, salt, and pepper.
  5. Heat the Oil: Heat vegetable oil to 350°F (175°C) in a deep fryer or large pot.
  6. Bread the Chicken: Remove chicken from marinade and dredge in the flour mixture.
  7. Fry the Chicken: Fry breaded chicken pieces for 4-5 minutes until golden brown and cooked through.
  8. Toast the Slider Buns: Lightly toast slider buns in a skillet or under the broiler.
  9. Assemble the Sliders: Spread sauce on buns, add fried chicken, coleslaw, and pickle slices, then top with the other half of the bun.

Notes

For extra crispy coating, mix a tablespoon of buttermilk marinade with the flour mixture. Can be transformed into nugget sliders for kids or buffalo chicken sliders.
