Description

A foolproof method to create crispy, restaurant-quality chicken burgers at home, guaranteed to be juicy and flavorful.


Ingredients

  • 4 large boneless, skinless chicken breasts (about 68 oz each)
  • 2 cups buttermilk
  • 2 tablespoons hot sauce (optional)
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons dried oregano
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon dried thyme
  • 4 brioche hamburger buns
  • 8 slices of thick-cut bacon (optional)
  • 4 slices of aged cheddar or Swiss cheese
  • 1 large tomato, sliced
  • 4 lettuce leaves (butter lettuce or iceberg)
  • 1/2 red onion, thinly sliced
  • Pickle slices
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon pickle juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Pound chicken breasts to an even thickness of about 3/4 inch.
  2. Whisk together buttermilk, hot sauce, garlic powder, onion powder, paprika, salt, and black pepper in a bowl.
  3. Submerge chicken in buttermilk mixture, cover, and refrigerate for at least 2 hours or preferably overnight.
  4. Combine flour, cornstarch, paprika, garlic powder, onion powder, oregano, salt, black pepper, cayenne pepper, and thyme in a shallow dish.
  5. Remove marinated chicken from refrigerator 15 minutes before cooking.
  6. Coat each chicken breast in the seasoned flour mixture. Optionally, double-coat for extra crispiness.
  7. Heat oil in a skillet to 350°F (175°C).
  8. Fry chicken for 4-5 minutes per side until golden brown and cooked through, with an internal temperature of 165°F (74°C).
  9. Transfer cooked chicken to a wire rack to drain excess oil.
  10. Whisk together mayonnaise, ketchup, mustard, pickle juice, garlic powder, and paprika in a bowl.
  11. Toast brioche buns until golden brown.
  12. Assemble burgers with sauce, lettuce, chicken, cheese, tomato, onion, pickles, and bacon if using.

Notes

Control oil temperature for perfect frying and let chicken rest to retain juices.
