Delicious homemade chicken tenders seasoned with bold Cajun spices and fried to crispy perfection.

- 2 pounds chicken breast, cut into tender-sized strips
- 2 cups buttermilk
- 2 tablespoons hot sauce
- 1 teaspoon salt
- 2 tablespoons paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 2 teaspoons cayenne pepper
- 1 teaspoon black pepper
- 1 teaspoon white pepper
- 1 teaspoon salt
- ½ teaspoon smoked paprika
- 2 cups all-purpose flour
- 1 cup cornstarch
- 2 teaspoons baking powder
- 1 teaspoon salt
- 3 tablespoons Cajun seasoning blend
- 6–8 cups vegetable oil for frying
Instructions
- Prepare the chicken by cutting it into strips and marinating in a mixture of buttermilk, hot sauce, and salt for at least 30 minutes.
- Make the Cajun seasoning by mixing all spice ingredients in a bowl.
- Prepare the breading station by whisking flour, cornstarch, baking powder, salt, and Cajun seasoning in a shallow dish.
- Heat oil in a deep fryer or pot to 350°F (175°C).
- Bread the chicken by dredging each piece in the seasoned flour mixture, then let rest for 5 minutes.
- Fry tenders in batches for 3-4 minutes until golden brown and cooked through.
- Drain cooked tenders on a wire rack and season with Cajun seasoning immediately.
- Serve hot with your favorite sides.
Notes
Double-coat for extra crunch by dipping breaded tenders back in buttermilk before flour mixture. Store leftovers in the refrigerator for up to 3 days.
