- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (preferably Italian-style)
- 1 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 2 cups marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- 2 tablespoons chopped fresh basil
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Place the chicken breasts between two pieces of plastic wrap or parchment paper and pound to an even thickness, about 1/2-inch thick.
- Season the chicken with salt and pepper on both sides.
- Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, Parmesan cheese, garlic powder, and oregano.
- Dredge each chicken breast in flour, dip into the beaten eggs, and coat with the breadcrumb mixture, pressing gently to adhere.
- Heat olive oil in a large oven-safe skillet over medium heat. Cook the breaded chicken for 2-3 minutes on each side until golden brown.
- Pour marinara sauce over the chicken in the skillet and sprinkle shredded mozzarella cheese on top.
- Transfer the skillet to the oven and bake for 20-25 minutes until cooked through and cheese is bubbly and golden.
- Remove from the oven and garnish with freshly chopped basil before serving.
Notes
For extra crunch, mix in cornmeal with the breadcrumbs. You can substitute the marinara sauce with homemade sauce for a fresher taste.
