Description

A warm and simple one-pot meal that combines tender chicken and flavorful stuffing, perfect for busy nights.


Ingredients

Scale
  • 4 pieces boneless, skinless chicken breasts
  • 1 box (about 6 ounce) stuffing mix
  • 1 can (10.5 ounce) cream of chicken soup
  • 2/3 cup milk
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • 1/2 cup frozen peas or mixed vegetables
  • A pinch of black pepper
  • A pinch of garlic powder
  • A pinch of thyme

Instructions

  1. Spray your Crock Pot with nonstick cooking spray to prevent sticking.
  2. Layer the chicken breasts at the bottom of the Crock Pot. If using frozen chicken, be sure to add an extra 30 minutes to the cooking time.
  3. In a separate bowl, whisk together the cream of chicken soup, milk, chicken broth, and sour cream until the mixture is smooth and well-combined.
  4. Pour the soup mixture over the chicken in the Crock Pot.
  5. Sprinkle the stuffing mix evenly over the top of the chicken and soup. Gently press down with a fork if needed.
  6. If using, add the frozen peas or mixed vegetables on top of the stuffing. Sprinkle with a pinch of black pepper, garlic powder, and thyme.
  7. Cover the Crock Pot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the stuffing is fluffy.
  8. Once the cooking time is up, use a fork to fluff the stuffing. If you’d like a crispy top, you can broil the dish for 2-3 minutes before serving.
  9. Serve hot and enjoy this comforting meal!

Notes

Use boneless chicken for even cooking. Do not lift the lid while cooking. For more flavor, season the chicken with salt before layering.
