- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1 cup spinach
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Season the chicken breasts with salt, pepper, and Italian seasoning.
- Add the chicken to the skillet and cook until browned on both sides, about 6-7 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for 1 minute.
- Add the cherry tomatoes and cook for another 2-3 minutes until softened.
- Pour in the heavy cream and bring to a simmer, then stir in the spinach and Parmesan cheese until melted.
- Return the chicken to the skillet and cook for an additional 5-10 minutes until the chicken is cooked through.
- Garnish with fresh basil before serving.
Notes
For extra flavor, marinate the chicken in Italian herbs before cooking. Add red pepper flakes for extra heat if desired.
