Description

Creamy Pesto Chicken is an easy weeknight meal with a rich sauce full of bright pesto flavor, perfect for serving over pasta, rice, or vegetables.


Ingredients

  • 2 chicken breasts
  • 1 cup heavy cream
  • 1/2 cup pesto sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then sear them in the skillet until golden brown and cooked through.
  3. Remove the chicken and set aside.
  4. In the same skillet, add heavy cream and pesto sauce; stir to combine.
  5. Bring the sauce to a simmer, then return the chicken to the skillet, coating it in the sauce.
  6. Cook for an additional 2-3 minutes until the sauce is heated through.
  7. Serve with grated Parmesan cheese if desired.

Notes

Pat the chicken dry before cooking for better browning. Full-fat heavy cream gives the best sauce texture.
