- 6 chicken breasts (boneless & skinless)
- 4 tsp olive oil
- 1 tsp dried oregano
- ½ tsp paprika
- 1 tsp salt
- ½ tsp pepper
- 4 garlic cloves (crushed/minced)
- 1 cup heavy/whipping cream
- 2 tsp lemon juice
- ¼ cup Parmesan cheese (grated)
- Parsley (for serving)
Instructions
- Place chicken breasts between two sheets of parchment paper and flatten to about 1 cm thick.
- Drizzle olive oil over chicken, seasoning both sides with oregano, paprika, salt, and pepper.
- Heat a large pan over high heat, add chicken, and cook for 2-3 minutes on each side until golden brown. Remove chicken and set aside.
- Add olive oil and garlic to the pan, cooking for about 30 seconds until fragrant.
- Pour in cream and lemon juice, bringing to a simmer. Add Parmesan cheese and season with salt and pepper to taste.
- Return chicken to the pan, reduce heat, and cook for 5-7 minutes until chicken is cooked through and sauce thickens.
- Season to taste, garnish with parsley, and serve warm.
Notes
Ensure even flattening of the chicken for uniform cooking. Adjust lemon juice to your taste for extra zest.
