Description

A quick and cozy one-pot meal featuring chicken, orzo, spinach, and bright lemon flavors, finished with creamy parmesan.


Ingredients

  • 1 pound chicken breast, diced
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 2 cups fresh spinach
  • 1 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced chicken and cook until browned.
  2. Add minced garlic and cook for an additional minute.
  3. Stir in orzo and chicken broth; bring to a boil.
  4. Reduce heat and simmer for about 10 minutes, or until orzo is cooked.
  5. Add fresh spinach, lemon juice, and lemon zest; stir until spinach is wilted.
  6. Remove from heat and mix in grated parmesan cheese.
  7. Season with salt and pepper to taste. Serve hot.

Notes

For extra brightness, serve with fresh lemon wedges. Can be paired with a side salad or steamed vegetables.
