Description

A comforting dish featuring tender chicken thighs cooked in a rich garlic and mushroom cream sauce.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 8 oz fresh cremini or button mushrooms, diced
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 2 tablespoons fresh parsley or thyme, chopped (plus extra for garnish)
  • Additional salt and pepper, to taste

Instructions

  1. Pat chicken thighs dry with paper towels and season with salt and pepper.
  2. Heat butter and olive oil in a large skillet over medium-high heat. Sear chicken thighs skin-side down for 5-7 minutes until crispy, then flip and cook for 2-3 minutes before setting aside.
  3. Add diced mushrooms and minced garlic to the skillet and sauté for 4-5 minutes until mushrooms brown and garlic is fragrant.
  4. Pour in chicken broth and scrape up any browned bits, allowing broth to reduce slightly. Stir in heavy cream and let sauce simmer until thickened.
  5. Nestle chicken thighs into the sauce, cover, and cook on low for 10-12 minutes until chicken is cooked through.
  6. Sprinkle with fresh parsley or thyme before serving.

Notes

For extra flavor, consider marinating the chicken beforehand. Feel free to add greens like spinach for added nutrition.
