- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup cheddar cheese, shredded
- 8 oz cream cheese
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Tortilla strips, for garnish
- Avocado, sliced, for garnish
- Fresh cilantro, for garnish
Instructions
- In a large pot, sauté the onion and garlic over medium heat until soft.
- Add the shredded chicken, black beans, corn, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper.
- Bring the mixture to a boil, then reduce to a simmer for about 20 minutes.
- Stir in the cream cheese until melted and well combined.
- Serve hot, garnished with cheddar cheese, tortilla strips, avocado, and cilantro.
Notes
For extra flavor, add jalapeños or lime juice. Use rotisserie chicken for a quicker option. Can be made vegetarian by replacing chicken with more beans or vegetables.
