Description

A comforting and flavorful soup combining chicken, cream cheese, and beans, perfect for chilly days.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup cheddar cheese, shredded
  • 8 oz cream cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla strips, for garnish
  • Avocado, sliced, for garnish
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, sauté the onion and garlic over medium heat until soft.
  2. Add the shredded chicken, black beans, corn, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper.
  3. Bring the mixture to a boil, then reduce to a simmer for about 20 minutes.
  4. Stir in the cream cheese until melted and well combined.
  5. Serve hot, garnished with cheddar cheese, tortilla strips, avocado, and cilantro.

Notes

For extra flavor, add jalapeños or lime juice. Use rotisserie chicken for a quicker option. Can be made vegetarian by replacing chicken with more beans or vegetables.
