Description

A crowd-pleasing appetizer that combines bold buffalo sauce with tender chicken and creamy cheese, perfect for gatherings.


Ingredients

  • 2 pounds boneless, skinless chicken breasts (or 2 cups cooked shredded chicken)
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo wing sauce (plus extra for serving)
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped green onions
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped celery (optional)
  • 2 tablespoons butter

Instructions

  1. If using raw chicken breasts, season with salt and pepper, then cook in a large skillet over medium heat for 6-7 minutes per side until fully cooked. Let cool slightly, then shred using two forks. If using pre-cooked chicken, simply shred it and set aside.
  2. Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish with butter or cooking spray.
  3. In a large mixing bowl, combine the softened cream cheese, buffalo wing sauce, and ranch dressing. Using an electric mixer, beat until smooth and well combined.
  4. Mix in the minced garlic, onion powder, and black pepper until evenly distributed.
  5. Fold the shredded chicken into the cream cheese mixture.
  6. Gently fold in 3/4 cup of the cheddar cheese and all of the mozzarella cheese, reserving the remaining cheddar for topping.
  7. Spread the buffalo chicken mixture evenly in your prepared baking dish. Sprinkle the reserved cheddar cheese over the top.
  8. Bake for 20-25 minutes, or until heated through and the cheese on top is melted and lightly golden.
  9. Remove from oven and sprinkle with chopped green onions and celery if using. Serve hot.

Notes

Use rotisserie chicken for a quicker prep. Adjust the heat level by choosing your favorite buffalo sauce. For a lighter version, substitute half the cream cheese with Greek yogurt.
