A crowd-pleasing appetizer that combines bold buffalo sauce with tender chicken and creamy cheese, perfect for gatherings.

- 2 pounds boneless, skinless chicken breasts (or 2 cups cooked shredded chicken)
- 8 oz cream cheese, softened
- 1/2 cup buffalo wing sauce (plus extra for serving)
- 1/2 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped green onions
- 2 cloves garlic, minced
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/4 cup chopped celery (optional)
- 2 tablespoons butter
Instructions
- If using raw chicken breasts, season with salt and pepper, then cook in a large skillet over medium heat for 6-7 minutes per side until fully cooked. Let cool slightly, then shred using two forks. If using pre-cooked chicken, simply shred it and set aside.
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish with butter or cooking spray.
- In a large mixing bowl, combine the softened cream cheese, buffalo wing sauce, and ranch dressing. Using an electric mixer, beat until smooth and well combined.
- Mix in the minced garlic, onion powder, and black pepper until evenly distributed.
- Fold the shredded chicken into the cream cheese mixture.
- Gently fold in 3/4 cup of the cheddar cheese and all of the mozzarella cheese, reserving the remaining cheddar for topping.
- Spread the buffalo chicken mixture evenly in your prepared baking dish. Sprinkle the reserved cheddar cheese over the top.
- Bake for 20-25 minutes, or until heated through and the cheese on top is melted and lightly golden.
- Remove from oven and sprinkle with chopped green onions and celery if using. Serve hot.
Notes
Use rotisserie chicken for a quicker prep. Adjust the heat level by choosing your favorite buffalo sauce. For a lighter version, substitute half the cream cheese with Greek yogurt.
