Description
Cozy chicken and dumplings recipe reminiscent of Cracker Barrel’s famous dish, featuring soft dumplings cooked in savory broth with tender chicken.
Ingredients
Scale
- 6 cups chicken broth
- 1 lb boneless skinless chicken breasts, halved
- 2 ribs of celery, broken in half
- 1/2 medium onion, kept whole
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1 1/4 teaspoons salt
- 1 cup plus 2 tablespoons milk
- Salt and pepper, to taste
Instructions
- In a large stockpot or Dutch oven, combine chicken broth, celery, onion, and chicken breasts. Bring to a boil, then reduce heat to a simmer and cover partially, cooking for approximately 15 minutes until chicken is fully cooked.
- While the chicken cooks, prepare the dumpling dough by blending flour, baking powder, and salt in a medium bowl. Gradually stir in the milk until just combined.
- Transfer the dough to a floured surface, roll out to 1/4 inch thick, and cut into 1-2 inch strips or squares.
- Once chicken is cooked, remove it from the pot and discard celery and onion. Add dumpling strips to the simmering broth and cook for 20-30 minutes until dumplings are cooked and broth thickens.
- Shred or chop the chicken and return it to the pot. Season with salt and pepper, and serve warm.
Notes
