- 2 large chicken breasts (boneless, skinless)
- 8 oz linguine pasta
- ½ cup unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh thyme leaves
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- ½ teaspoon crushed red pepper flakes (optional)
- Salt and pepper, to taste
- 1 cup chicken broth
- 1 tablespoon lemon juice
- Freshly grated Parmesan cheese, for garnish
Instructions
- Season the chicken breasts with salt, pepper, smoked paprika, and onion powder. Melt 2 tablespoons of butter over medium heat in a large skillet. Cook the chicken for about 5-7 minutes on each side until browned and cooked through, then remove and set aside.
- In salted boiling water, cook the linguine pasta according to package instructions. Drain and set aside.
- In the same skillet, add the remaining butter, then add minced garlic and sauté for about 1 minute. Stir in chicken broth and lemon juice, and let it simmer for a few minutes.
- Slice the cooked chicken and return it to the skillet with the linguine. Toss together in the cowboy butter sauce, adding fresh parsley, thyme, and crushed red pepper flakes.
- Plate the dish, garnish with freshly grated Parmesan cheese, and enjoy!
Notes
For extra flavor, marinate the chicken in lemon juice and herbs before cooking. Adjust spice levels as desired.
