Description

A delightful dish featuring juicy chicken in a buttery garlic sauce served with linguine, perfect for a weeknight dinner.


Ingredients

  • 2 large chicken breasts (boneless, skinless)
  • 8 oz linguine pasta
  • ½ cup unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 cup chicken broth
  • 1 tablespoon lemon juice
  • Freshly grated Parmesan cheese, for garnish

Instructions

  1. Season the chicken breasts with salt, pepper, smoked paprika, and onion powder. Melt 2 tablespoons of butter over medium heat in a large skillet. Cook the chicken for about 5-7 minutes on each side until browned and cooked through, then remove and set aside.
  2. In salted boiling water, cook the linguine pasta according to package instructions. Drain and set aside.
  3. In the same skillet, add the remaining butter, then add minced garlic and sauté for about 1 minute. Stir in chicken broth and lemon juice, and let it simmer for a few minutes.
  4. Slice the cooked chicken and return it to the skillet with the linguine. Toss together in the cowboy butter sauce, adding fresh parsley, thyme, and crushed red pepper flakes.
  5. Plate the dish, garnish with freshly grated Parmesan cheese, and enjoy!

Notes

For extra flavor, marinate the chicken in lemon juice and herbs before cooking. Adjust spice levels as desired.
