- 4 boneless, skinless chicken breasts
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh chives, chopped
- 1 tablespoon fresh dill, chopped
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- Salt and black pepper to taste
- Juice of 1 lemon
Instructions
- Preheat the oven to 400°F (200°C).
- In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Stir in parsley, chives, dill, paprika, cayenne, lemon juice, salt, and pepper. Mix well to combine.
- Place chicken breasts in a baking dish and pour the cowboy butter sauce over the top.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and juices run clear.
- Remove from the oven, let rest for a few minutes, then serve warm.
Notes
Pound thicker breasts to ensure even cooking. Use a meat thermometer to check for doneness at 165°F (74°C). Adjust seasoning to taste.
