- 2 chicken breasts
- 1 tablespoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup cooked rice
- 1 can black beans (drained and rinsed)
- 1 cup fresh vegetables (such as lettuce, tomatoes, and bell peppers)
- 1/2 cup chipotle ranch dressing
- 4 large tortillas
Instructions
- Preheat the grill to medium-high heat.
- Season the chicken breasts with smoked paprika, garlic powder, onion powder, cumin, salt, and pepper.
- Grill the chicken for 6-7 minutes on each side or until fully cooked.
- Let the chicken rest for a few minutes before slicing it.
- Warm the tortillas in a skillet or microwave.
- To assemble, layer rice, black beans, grilled chicken, fresh vegetables, and chipotle ranch dressing on each tortilla.
- Roll up the tortillas tightly to form burritos.
- Serve immediately with extra dressing on the side if desired.
Notes
Marinate the chicken for an hour for more flavor. Use leftover grilled chicken to save time. You can make a vegetarian version by using grilled vegetables or tofu instead of chicken.
