Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season the chicken thighs with salt and pepper, and brown them on all sides.
- Remove the chicken and add the sausage to the skillet, cooking until browned.
- Add the sliced peppers, onion, and garlic; sauté until softened.
- Return the chicken to the skillet, then add the chicken broth, vinegar, and red pepper flakes.
- Bring to a simmer, cover, and cook for about 25-30 minutes until the chicken is cooked through.
- Serve hot, optionally garnished with fresh herbs.
Notes
For extra flavor, marinate the chicken thighs in vinegar, garlic, and spices for an hour prior to cooking. Adjust the amount of red pepper flakes to suit your spice preference.
