Description
Quick and light Chicken Scallopini cooked in a flavorful lemon and broth sauce, perfect for a weeknight meal.
Ingredients

- 2 chicken breasts
- 1/4 cup flour
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Flatten the chicken breasts between two pieces of plastic wrap using a meat mallet. Season with salt and pepper, then dredge in flour.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until golden brown, about 5 minutes per side. Remove from the pan and set aside.
- In the same skillet, add garlic and sauté until fragrant.
- Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan.
- Return the chicken to the skillet and simmer in the sauce for another 3-5 minutes.
- Garnish with fresh parsley before serving.
Notes
Serve over pasta or rice to soak up the sauce, or pair with salad or steamed vegetables.
