Description

A quick and tasty Chicken Satay dish featuring a homemade Thai peanut sauce. Perfect for weeknight meals or party snacks.


Ingredients

  • 1 lb chicken breast, cut into strips
  • 1/4 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • Wooden skewers, soaked in water
  • 1/2 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • Water to achieve desired consistency

Instructions

  1. In a bowl, mix coconut milk, soy sauce, brown sugar, lime juice, coriander, and cumin. Marinate chicken strips in this mixture for at least 30 minutes.
  2. Thread chicken onto soaked skewers.
  3. Grill skewers over medium-high heat for 5-7 minutes on each side until cooked through.
  4. For the peanut sauce, combine peanut butter, soy sauce, lime juice, honey, and water to achieve desired consistency.
  5. Serve chicken satay with peanut sauce drizzled on top or as a dip.

Notes

Marinate the chicken for a few hours for more flavor. You can substitute chicken thighs for a juicier result or use almond butter in place of peanut butter.
