A quick and tasty Chicken Satay dish featuring a homemade Thai peanut sauce. Perfect for weeknight meals or party snacks.

- 1 lb chicken breast, cut into strips
- 1/4 cup coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- Wooden skewers, soaked in water
- 1/2 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon honey
- Water to achieve desired consistency
Instructions
- In a bowl, mix coconut milk, soy sauce, brown sugar, lime juice, coriander, and cumin. Marinate chicken strips in this mixture for at least 30 minutes.
- Thread chicken onto soaked skewers.
- Grill skewers over medium-high heat for 5-7 minutes on each side until cooked through.
- For the peanut sauce, combine peanut butter, soy sauce, lime juice, honey, and water to achieve desired consistency.
- Serve chicken satay with peanut sauce drizzled on top or as a dip.
Notes
Marinate the chicken for a few hours for more flavor. You can substitute chicken thighs for a juicier result or use almond butter in place of peanut butter.
