- 2 slices of bread
- 1 cup cooked chicken, shredded
- 2 tablespoons pesto
- 1/2 cup mozzarella cheese, shredded
- 1 tablespoon olive oil
Instructions
- Preheat a panini press or grill pan over medium heat.
- Spread pesto on one side of each slice of bread.
- Layer the shredded chicken and mozzarella cheese on one slice of bread.
- Top with the other slice of bread, pesto side down.
- Brush the outside of the sandwich with olive oil.
- Place the sandwich in the panini press or grill pan and cook until the bread is crispy and the cheese is melted, about 3-5 minutes.
- Remove from heat, slice, and serve warm.
