Description

A delicious chicken pesto panini that combines tender chicken, fresh basil pesto, and melted cheese between crispy bread, perfect for a satisfying lunch.


Ingredients

  • 2 slices of bread
  • 1 cup cooked chicken, shredded
  • 2 tablespoons pesto
  • 1/2 cup mozzarella cheese, shredded
  • 1 tablespoon olive oil

Instructions

  1. Preheat a panini press or grill pan over medium heat.
  2. Spread pesto on one side of each slice of bread.
  3. Layer the shredded chicken and mozzarella cheese on one slice of bread.
  4. Top with the other slice of bread, pesto side down.
  5. Brush the outside of the sandwich with olive oil.
  6. Place the sandwich in the panini press or grill pan and cook until the bread is crispy and the cheese is melted, about 3-5 minutes.
  7. Remove from heat, slice, and serve warm.
