A quick and easy chicken meatball dish with a simple sauce and rice that the whole family will enjoy.

- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 cups marinara sauce
- Fresh basil for garnish
- Homemade Rice Pilaf for serving
Instructions
- In a large bowl, combine ground chicken, breadcrumbs, parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix until well blended.
- Shape the mixture into meatballs, about 1 inch in diameter.
- In a large skillet, heat some oil over medium heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes.
- Pour the marinara sauce over the meatballs, cover, and let it simmer for 15-20 minutes until the meatballs are cooked through.
- Serve the chicken meatballs over homemade rice pilaf and garnish with fresh basil.
Notes
Keep meatballs small for even cooking. Do not overmix to maintain tenderness. Brown for flavor, and taste the sauce before serving.
