- 4 boneless, skinless chicken breasts
- 1 cup mushrooms, sliced
- 1 cup Marsala wine
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken breasts and sear until golden brown on both sides, about 4-5 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced mushrooms and cook until browned and tender.
- Pour in the Marsala wine, scraping the bottom of the skillet to release any browned bits.
- Let the wine simmer and reduce by half, then stir in the heavy cream.
- Return the chicken to the skillet and simmer for another 10 minutes, allowing the sauce to thicken.
- Garnish with chopped parsley before serving.
Notes
Pound chicken breasts to even thickness for even cooking. Use a good quality Marsala wine for better flavor.
