Description

Delicious marinated chicken kabobs grilled to perfection, packed with flavor and perfect for summer barbecues.


Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs, cut into 1.5-inch cubes
  • 2 large bell peppers (red and yellow), cut into 1-inch pieces
  • 1 large red onion, cut into 1-inch pieces
  • 1 large zucchini, sliced into thick rounds
  • 8 oz cherry tomatoes
  • 810 wooden or metal skewers
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 2 teaspoons dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. In a large mixing bowl, whisk together olive oil, lemon juice, garlic, honey, Dijon mustard, oregano, smoked paprika, cumin, black pepper, and salt to create the marinade.
  2. Cut chicken into 1.5-inch cubes and marinate in a resealable bag or shallow dish for at least 2 hours, preferably 4 hours or overnight.
  3. Prepare vegetables while the chicken marinates, cutting them into uniform sizes for even cooking.
  4. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  5. Thread marinated chicken and vegetables alternately onto the skewers.
  6. Preheat grill to medium-high (400-450°F) and prepare with oil.
  7. Sprinkle the kabob seasoning evenly over assembled kabobs just before grilling.
  8. Grill kabobs for 12-15 minutes, turning every 3-4 minutes and basting with reserved marinade.
  9. Remove from grill and let rest for 2-3 minutes before serving.

Notes

Use a meat thermometer to ensure chicken reaches 165°F for safety. You can prep the marinade and vegetables ahead of time for convenience.
