Delicious marinated chicken kabobs grilled to perfection, packed with flavor and perfect for summer barbecues.

- 2 pounds boneless, skinless chicken breasts or thighs, cut into 1.5-inch cubes
- 2 large bell peppers (red and yellow), cut into 1-inch pieces
- 1 large red onion, cut into 1-inch pieces
- 1 large zucchini, sliced into thick rounds
- 8 oz cherry tomatoes
- 8–10 wooden or metal skewers
- 1/4 cup olive oil
- 3 tablespoons fresh lemon juice
- 3 cloves garlic, minced
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 2 teaspoons dried oregano
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon cayenne pepper (optional)
Instructions
- In a large mixing bowl, whisk together olive oil, lemon juice, garlic, honey, Dijon mustard, oregano, smoked paprika, cumin, black pepper, and salt to create the marinade.
- Cut chicken into 1.5-inch cubes and marinate in a resealable bag or shallow dish for at least 2 hours, preferably 4 hours or overnight.
- Prepare vegetables while the chicken marinates, cutting them into uniform sizes for even cooking.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Thread marinated chicken and vegetables alternately onto the skewers.
- Preheat grill to medium-high (400-450°F) and prepare with oil.
- Sprinkle the kabob seasoning evenly over assembled kabobs just before grilling.
- Grill kabobs for 12-15 minutes, turning every 3-4 minutes and basting with reserved marinade.
- Remove from grill and let rest for 2-3 minutes before serving.
Notes
Use a meat thermometer to ensure chicken reaches 165°F for safety. You can prep the marinade and vegetables ahead of time for convenience.
