Description

Deliciously seasoned chicken kabobs baked in the oven, combined with colorful vegetables for a nutritious and satisfying meal.


Ingredients

  • 2 lbs boneless, skinless chicken thighs or breasts, cut into -inch cubes
  • ¼ cup olive oil
  • 3 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon ground black pepper
  • 1 teaspoon salt
  • ¼ teaspoon cayenne pepper (optional)
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large yellow bell pepper, cut into 1-inch pieces
  • 1 large red onion, cut into 1-inch pieces
  • 1 medium zucchini, sliced into thick rounds
  • 8 oz cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a large mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, cumin, paprika, salt, black pepper, and cayenne pepper if using.
  2. Add the cubed chicken to the marinade, ensuring every piece is well-coated. Cover and refrigerate for at least 30 minutes.
  3. While the chicken marinates, cut all vegetables into uniform 1-inch pieces and toss with olive oil, salt, and pepper.
  4. Preheat your oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper.
  5. Thread the marinated chicken and vegetables alternately onto skewers.
  6. Place the assembled kabobs on the baking sheet, ensuring they don’t touch each other.
  7. Bake for 20-25 minutes, turning the kabobs halfway through cooking, until chicken is cooked through and vegetables are tender.
  8. Remove from oven, let rest for 3-5 minutes, garnish with parsley, and serve with lemon wedges.

Notes

For added flavor, marinate chicken for up to 4 hours. Use a meat thermometer to ensure chicken reaches 165°F.
