- 8 chicken drumsticks
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup barbecue sauce (gluten-free)
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- Prepare the chicken drumsticks by cutting the skin around the top and pushing the meat down to form a ‘lollipop’ shape.
- In a large mixing bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Toss the drumsticks in the seasoning mixture until evenly coated.
- Place the seasoned drumsticks on the baking sheet and bake for about 30 minutes.
- Remove from the oven and brush with barbecue sauce.
- Return to the oven and bake for an additional 10 minutes or until cooked through and caramelized.
- Garnish with fresh parsley if desired, and serve hot.
Notes
Cut the skin carefully to create the lollipop shape without cutting the meat. Adjust spices as needed and broil for extra crispiness.
