- 2 large boneless, skinless chicken breasts
- 2 tablespoons olive oil, divided
- 3 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups fresh spinach
- 8 ounces cream cheese, softened
- 1 cup shredded mozzarella cheese, divided
- 1/2 cup Parmesan cheese, optional
Instructions
- Preheat the oven to 400°F and lightly grease a 9×13 inch baking dish.
- Cut the chicken breasts in half horizontally to create four cutlets and pound the thicker ends for even thickness.
- In a large bowl, whisk 1 tablespoon of olive oil with garlic, Italian seasoning, salt, and pepper. Add chicken, toss to coat, cover, and chill for 15-30 minutes.
- Heat the remaining olive oil in a skillet over medium heat. Add spinach and cook until wilted, about 2-3 minutes.
- In a medium bowl, beat the cream cheese until smooth. Mix in spinach, 1/2 cup mozzarella, and Parmesan.
- Remove chicken from marinade and let excess drip off. Optionally sear chicken for 1-2 minutes per side.
- Arrange chicken in a single layer in the baking dish, spread the spinach mixture on top, and sprinkle remaining mozzarella.
- Bake for 20-30 minutes until chicken is cooked and cheese is melted. Let stand for 5 minutes before serving.
Notes
Feel free to customize with different cheeses or vegetables. Leftovers can be stored in an airtight container for up to three days.
