Description

A warm Italian stew featuring chicken, tomatoes, peppers, and olives, perfect for family meals.


Ingredients

  • 4 chicken thighs
  • 2 chicken breasts
  • 1 onion, chopped
  • 2 bell peppers, sliced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup olives, pitted and sliced
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Polenta or crusty bread for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken with salt and pepper, then brown on all sides. Remove and set aside.
  3. In the same skillet, add onion and bell peppers, sauté until soft.
  4. Add garlic, oregano, and basil, and cook for another minute.
  5. Stir in diced tomatoes, olives, and chicken broth.
  6. Return the chicken to the skillet, cover, and simmer for about 30-40 minutes until the chicken is cooked through.
  7. Serve hot over polenta or with crusty bread.

Notes

For better flavor, brown the chicken well and consider adding a splash of red wine for depth.
