Description

A warm and simple chicken and dumplings recipe that makes a thick, comforting stew.

Ingredients

Scale
  • 6 cups chicken broth
  • 1 lb chicken breasts
  • 2 celery ribs
  • 1/2 onion
  • 3 cups flour
  • 1 tbsp baking powder
  • 1.25 tsp salt
  • 1 cup + 2 tbsp milk

Instructions

  1. Boil the chicken in the chicken broth with the celery and onion.
  2. Lower the heat and simmer for 15 minutes until the chicken cooks through.
  3. While the broth simmers, mix the flour, baking powder, salt, and milk to make a soft dough.
  4. Roll the dough to about 1/4 inch thick and cut into strips or small pieces.
  5. Remove the chicken and vegetables from the broth. Discard the vegetables and keep the broth.
  6. Drop the dough strips into the simmering broth. Keep the broth at a gentle simmer.
  7. Simmer the dumplings gently for 20–30 minutes until they swell and the broth thickens.
  8. Shred the cooked chicken and return it to the pot. Stir and heat through.
  9. Taste and add salt or pepper if needed. Serve hot.

Notes

Serve hot with a sprinkle of fresh parsley or black pepper. This dish pairs well with plain bread or a light salad.
