Description

Recreate the iconic Chick-fil-A taste at home with this copycat crispy chicken sandwich recipe that features a perfectly seasoned brine and crispy coating.

  • 4 boneless, skinless chicken breasts (68 oz each)
  • 4 cups warm water
  • 1/4 cup kosher salt
  • 2 tablespoons granulated sugar
  • 1 tablespoon pickle juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups all-purpose flour
  • 2 tablespoons powdered sugar
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 2 large eggs
  • 1/4 cup buttermilk
  • 1 tablespoon pickle juice
  • 4 brioche hamburger buns
  • 4 tablespoons butter, melted
  • 8 pickle slices
  • 4 leaves butter lettuce (optional)
  • Mayonnaise (optional)
  • 68 cups peanut oil (or vegetable oil)

Instructions

  1. Dissolve kosher salt and sugar in warm water, add pickle juice, garlic powder, and onion powder. Pound chicken breasts to 1/2-inch thickness, brine for at least 2 hours or overnight.
  2. Whisk together flour, powdered sugar, salt, black pepper, paprika, garlic powder, onion powder, cayenne pepper, thyme, and oregano in a large bowl.
  3. Beat eggs with buttermilk and pickle juice in a shallow dish.
  4. Set up coating station: seasoned flour in one dish, egg wash in another, and a clean plate for coated chicken.
  5. Heat oil in a pot to 350°F (175°C), ensuring at least 3 inches deep.
  6. Dredge chicken in seasoned flour, dip in egg wash, and coat in flour again.
  7. Fry chicken for 3-4 minutes per side until golden brown and internal temperature reaches 165°F (74°C).
  8. Transfer cooked chicken to a wire rack and let rest for 2-3 minutes.
  9. Toast the cut sides of the brioche buns in melted butter until golden brown.
  10. Assemble the sandwich: place chicken on the bottom bun, add pickles, and top with bun. Add lettuce and mayonnaise if desired.

Notes

For a healthier version, consider using the air fryer method. Store leftover chicken in the refrigerator for up to 3 days.
