- 1 lb white chicken meat, diced
- 1 cup andouille sausage, sliced
- 1 cup shrimp, peeled and deveined
- 1 can white beans, drained and rinsed
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- Salt and pepper to taste
- Olive oil
- Chopped green onions for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic; sauté until softened.
- Add diced chicken and andouille sausage; cook until browned.
- Stir in the Cajun seasoning, then add chicken broth.
- Bring to a simmer and cook for about 15 minutes.
- Add white beans and shrimp; cook until shrimp are pink.
- Stir in heavy cream, and season with salt and pepper.
- Serve hot, garnished with chopped green onions.
Notes
For spicier chili, add more Cajun seasoning or diced jalapeños. You can substitute shrimp with other seafood or omit it for a classic chicken chili.
