Description

A delicious blend of chicken, sausage, shrimp, and spices, perfect for gatherings and family dinners.


Ingredients

  • 1 lb white chicken meat, diced
  • 1 cup andouille sausage, sliced
  • 1 cup shrimp, peeled and deveined
  • 1 can white beans, drained and rinsed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp Cajun seasoning
  • Salt and pepper to taste
  • Olive oil
  • Chopped green onions for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic; sauté until softened.
  3. Add diced chicken and andouille sausage; cook until browned.
  4. Stir in the Cajun seasoning, then add chicken broth.
  5. Bring to a simmer and cook for about 15 minutes.
  6. Add white beans and shrimp; cook until shrimp are pink.
  7. Stir in heavy cream, and season with salt and pepper.
  8. Serve hot, garnished with chopped green onions.

Notes

For spicier chili, add more Cajun seasoning or diced jalapeños. You can substitute shrimp with other seafood or omit it for a classic chicken chili.
