- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano

- ½ teaspoon cayenne pepper
- ½ teaspoon black pepper
- 1 teaspoon salt
- ½ teaspoon white pepper (optional)
- 4 brioche hamburger buns
- 4 lettuce leaves (butter lettuce or iceberg)
- 2 large tomatoes, sliced
- 1 red onion, thinly sliced
- 4 slices pepper jack cheese (optional)
- ½ cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- 1 teaspoon hot sauce (adjust to taste)
Instructions
- Prepare the Cajun seasoning blend by mixing paprika, garlic powder, onion powder, oregano, thyme, cayenne pepper, black pepper, salt, and white pepper in a small bowl.
- Pound chicken breasts to ½-inch thickness and season with olive oil and Cajun seasoning.
- Preheat the grill to medium-high heat (400-450°F).
- Whisk together mayonnaise, Dijon mustard, honey, and hot sauce for the sandwich sauce.
- Grill chicken for 6-7 minutes per side until cooked through, adding cheese during the last 2 minutes if desired.
- Rest the chicken for 5 minutes under aluminum foil.
- Toast brioche buns on the grill for 1-2 minutes.
- Assemble the sandwiches with sauce, lettuce, chicken, tomato, and onion.
