  • 4 boneless, skinless chicken breasts (68 oz each)
  • 2 tablespoons olive oil
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon cayenne pepper
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon white pepper (optional)
  • 4 brioche hamburger buns
  • 4 lettuce leaves (butter lettuce or iceberg)
  • 2 large tomatoes, sliced
  • 1 red onion, thinly sliced
  • 4 slices pepper jack cheese (optional)
  • ½ cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon hot sauce (adjust to taste)

Instructions

  1. Prepare the Cajun seasoning blend by mixing paprika, garlic powder, onion powder, oregano, thyme, cayenne pepper, black pepper, salt, and white pepper in a small bowl.
  2. Pound chicken breasts to ½-inch thickness and season with olive oil and Cajun seasoning.
  3. Preheat the grill to medium-high heat (400-450°F).
  4. Whisk together mayonnaise, Dijon mustard, honey, and hot sauce for the sandwich sauce.
  5. Grill chicken for 6-7 minutes per side until cooked through, adding cheese during the last 2 minutes if desired.
  6. Rest the chicken for 5 minutes under aluminum foil.
  7. Toast brioche buns on the grill for 1-2 minutes.
  8. Assemble the sandwiches with sauce, lettuce, chicken, tomato, and onion.

Notes
