- 2 chicken breasts
- 2 tablespoons Cajun seasoning
- 8 oz pasta (fettuccine or penne)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook pasta according to package directions; drain and set aside.
- In a skillet, heat olive oil over medium heat. Season chicken breasts with Cajun seasoning and cook until golden brown and cooked through, about 5-7 minutes per side. Remove from skillet and slice.
- In the same skillet, add onion, bell pepper, and garlic; sauté until softened.
- Stir in heavy cream and Parmesan cheese, letting it simmer to thicken.
- Add cooked pasta and sliced chicken to the skillet, tossing to combine.
- Season with salt and pepper to taste.
- Garnish with fresh parsley and serve hot.
Notes
For a lighter version, you can use half-and-half instead of heavy cream. Adjust the Cajun seasoning based on your spice preference.
