Description

Quick, tasty, and filling stuffed peppers with spicy buffalo chicken, creamy cheese, and sweet bell peppers.


Ingredients

Scale
  • 4 bell peppers
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 1/4 cup cream cheese
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a large bowl, mix together the shredded chicken, buffalo sauce, cream cheese, and half of the cheddar cheese. Season with salt and pepper.
  4. Stuff the mixture into each bell pepper.
  5. Place the stuffed peppers in a baking dish and cover with foil.
  6. Bake for 25-30 minutes, then remove the foil, sprinkle with the remaining cheddar cheese, and bake for an additional 5-10 minutes until the cheese is bubbly.
  7. Garnish with fresh parsley if desired and serve warm.

Notes

Use rotisserie chicken to save time. Test one pepper for seasoning before stuffing all.
