Description
This easy slow cooker recipe transforms chicken into tender, spicy buffalo sandwiches with minimal effort, perfect for busy weeknights or gatherings.
Ingredients
Scale
- 2 pounds boneless, skinless chicken breasts or thighs
- 1 cup buffalo wing sauce (like Frank’s RedHot)
- 1 packet (1 oz) ranch dressing mix
- 8 oz cream cheese, softened
- 2 tablespoons butter
- 6–8 sandwich buns or rolls
- Optional toppings: lettuce, tomato, red onion, pickles, extra buffalo sauce
Instructions
- Place the chicken in the crockpot. If using frozen chicken, ensure it’s completely thawed and pat it dry.
- In a bowl, whisk together buffalo wing sauce and ranch dressing mix, then pour over the chicken.
- Distribute cream cheese cubes and butter pieces over the chicken.
- Cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours until chicken shreds easily.
- Shred the chicken in the crockpot and mix with the sauce.
- Taste the mixture and adjust seasoning if needed.
- Prepare the sandwiches by piling the mixture on the buns and adding toppings.
Notes
For easier mixing, soften cream cheese at room temperature and consider using slow cooker liners for cleanup.
