- 8 ounces Boursin cheese (or similar garlic and herb cheese spread)
- 1 cup spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped

- Olive oil for cooking
- Fresh herbs for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix together Boursin cheese, chopped spinach, sun-dried tomatoes, garlic powder, salt, and pepper until well combined.
- Carefully slice a pocket into each chicken breast, being careful not to cut all the way through.
- Stuff each pocket with the cheese mixture, securing with toothpicks if needed.
- Heat a skillet over medium heat and add olive oil.
- Sear the chicken breasts on both sides for about 3-4 minutes until golden brown.
- Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from the oven, let rest for a few minutes, then garnish with fresh herbs and serve.
Notes
For extra flavor, add herbs like thyme or basil to the filling mixture. Check the chicken’s internal temperature to ensure it’s fully cooked.
