- 3 large ripe peaches, pitted and diced (about 2 cups)
- 1/3 cup honey
- 2 tablespoons hot sauce (adjust to taste)
- 2 tablespoons apple cider vinegar

- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons cornstarch
- 2 green onions, finely chopped (for garnish)
- 1 tablespoon sesame seeds (for garnish)
- Fresh peach slices (for serving)
Instructions
- Pat the chicken wings completely dry with paper towels. In a large bowl, combine salt, black pepper, smoked paprika, onion powder, and cornstarch. Toss the wings in this mixture until evenly coated. Let the seasoned wings rest in the refrigerator for at least 2 hours or overnight.
- In a small saucepan, combine peaches, honey, hot sauce, apple cider vinegar, soy sauce, garlic, and ginger. Simmer over medium heat for 12-15 minutes until thickened. Mash some peach pieces for texture.
- Preheat your oven to 425°F (220°C). Line two baking sheets with aluminum foil, placing wire racks on top. Lightly spray or brush the racks with oil.
- Arrange the wings on the racks without touching. Bake for 25 minutes, flip, and bake for another 15-20 minutes until golden brown and internal temperature reaches 165°F (74°C).
- Remove the wings and increase oven temperature to 450°F (232°C). Coat each wing with the hot honey peach glaze and return to the oven for 5-7 minutes until caramelized.
- Let the wings rest for 5 minutes, then transfer to a serving platter and drizzle with remaining glaze. Garnish with green onions, sesame seeds, and fresh peach slices. Serve immediately.
Notes
For extra crispy wings, never skip the drying step and avoid overcrowding the baking sheets. Adjust the spice level to your preference.
