- 1/4 cup fresh lemon juice (about 2 large lemons)
- 3 tablespoons low sodium soy sauce
- 2 tablespoons honey or brown sugar
- 4 garlic cloves, minced
- 2 teaspoons Dijon mustard
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon black pepper, freshly ground
- 1 teaspoon salt
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh herbs (rosemary, thyme, or parsley), chopped
- 2–3 pounds chicken pieces (breasts, thighs, drumsticks, or mix)
- 1 tablespoon olive oil for brushing grill grates
Instructions
- Prepare the chicken by cleaning and patting it dry.
- In a bowl, whisk together olive oil and lemon juice.
- Add soy sauce and honey, whisk until dissolved.
- Incorporate minced garlic and Dijon mustard, whisk to combine.
- Add dry spices and mix until uniform.
- Fold in fresh chopped herbs.
- Marinate chicken in the mixture for 2-24 hours.
- Preheat grill to medium-high heat.
- Remove chicken from marinade, grill until cooked through (internal temp 165°F).
- Let chicken rest for 5-10 minutes before serving.
Notes
For best results, marinate in the refrigerator and avoid overcooking to maintain juiciness.
