Description

Perfectly grilled BBQ chicken thighs marinated in a homemade sauce, ideal for summer gatherings.


Ingredients

  • 8 bone-in, skin-on chicken thighs (about 3 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar (packed)
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon liquid smoke
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Pat the chicken thighs dry and place in a large bowl. Mix the dry rub ingredients in a small bowl and apply to chicken.
  2. Drizzle olive oil over the chicken and rub to coat, then apply the dry rub and let marinate in the fridge for at least 2 hours.
  3. Combine BBQ sauce ingredients in a saucepan and simmer for 10-15 minutes until thickened.
  4. Preheat the grill to medium heat and prepare for indirect cooking.
  5. Place chicken skin-side down on the cooler side of the grill and cook for 20-25 minutes.
  6. Flip the thighs to the hotter side and cook for 5-7 minutes until reaching 165°F.
  7. Brush BBQ sauce on both sides and grill for another 2-3 minutes.
  8. Remove from grill, let rest for 5 minutes, and serve with extra sauce.

Notes

For extra flavor, consider marinating overnight. Ensure to monitor grill temperature to avoid burning the sauce.
