Perfectly grilled BBQ chicken thighs marinated in a homemade sauce, ideal for summer gatherings.

- 8 bone-in, skin-on chicken thighs (about 3 pounds)
- 2 tablespoons olive oil
- 1 tablespoon brown sugar
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional)
- 1 cup ketchup
- 1/4 cup apple cider vinegar
- 1/4 cup brown sugar (packed)
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon liquid smoke
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Pat the chicken thighs dry and place in a large bowl. Mix the dry rub ingredients in a small bowl and apply to chicken.
- Drizzle olive oil over the chicken and rub to coat, then apply the dry rub and let marinate in the fridge for at least 2 hours.
- Combine BBQ sauce ingredients in a saucepan and simmer for 10-15 minutes until thickened.
- Preheat the grill to medium heat and prepare for indirect cooking.
- Place chicken skin-side down on the cooler side of the grill and cook for 20-25 minutes.
- Flip the thighs to the hotter side and cook for 5-7 minutes until reaching 165°F.
- Brush BBQ sauce on both sides and grill for another 2-3 minutes.
- Remove from grill, let rest for 5 minutes, and serve with extra sauce.
Notes
For extra flavor, consider marinating overnight. Ensure to monitor grill temperature to avoid burning the sauce.
