Description

Juicy and flavorful BBQ chicken thighs marinated in a delicious mixture and grilled to perfection.


Ingredients

  • 3 lbs (1.4 kg) chicken thighs (bone-in, skin-on preferred)
  • 1/4 cup (60ml) olive oil
  • 3 tablespoons soy sauce
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons smoked paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 cup (120ml) barbecue sauce
  • 2 tablespoons honey
  • 1 tablespoon butter
  • 1 teaspoon apple cider vinegar

Instructions

  1. Prepare the Marinade: In a large mixing bowl, whisk together olive oil, soy sauce, apple cider vinegar, brown sugar, and tomato paste until smooth. Add Worcestershire sauce, smoked paprika, garlic powder, onion powder, cumin, black pepper, salt, and cayenne pepper. Mix thoroughly.
  2. Marinate the Chicken: Pat the chicken thighs dry and place in a resealable bag or dish. Pour the marinade over, ensuring all pieces are coated. Refrigerate for at least 2 hours, preferably overnight.
  3. Prepare the Grill: Remove chicken from refrigerator 30 minutes before grilling. Preheat the grill to medium-high heat and clean the grates.
  4. Make the BBQ Glaze: In a small saucepan, combine barbecue sauce, honey, butter, and apple cider vinegar. Heat over low until smooth.
  5. Grill the Chicken Thighs: Remove chicken from marinade and grill skin-side down for 6-7 minutes. Flip and grill for another 6-7 minutes.
  6. Move to Indirect Heat: Place chicken on the cooler side of the grill and cook for 10-15 minutes more, until internal temperature reaches 165°F (74°C).
  7. Apply the Glaze: Brush chicken with BBQ glaze during the last 5 minutes of cooking.
  8. Rest and Serve: Let chicken rest for 5 minutes before serving.

Notes

For best results, marinate the chicken thighs overnight. You can also use boneless thighs, reducing the cooking time.
