Description

Tender, smoky BBQ chicken nestled between soft slider buns, perfect for any gathering.


Ingredients

  • 3 cups rotisserie chicken, shredded (or 2 lbs chicken breasts, cooked and shredded)
  • 1 cup BBQ sauce (divided)
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper (optional)
  • 8 slider buns (brioche or potato buns work best)
  • 2 tablespoons butter, melted
  • 1 cup coleslaw mix
  • 2 tablespoons mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 8 pickle slices
  • 1/2 red onion, thinly sliced (optional)

Instructions

  1. In a small bowl, combine the coleslaw mix, mayonnaise, apple cider vinegar, and sugar. Season with salt and pepper to taste. Mix well and set aside.
  2. In a large skillet over medium heat, combine 3/4 cup of BBQ sauce, brown sugar, apple cider vinegar, smoked paprika, garlic powder, onion powder, black pepper, salt, and optional cayenne pepper. Stir and simmer for 2-3 minutes.
  3. Add shredded chicken to the skillet and fold into the sauce gently.
  4. Reduce heat to low and let simmer for 15-20 minutes, stirring occasionally.
  5. Preheat oven to 350°F (175°C). Cut slider buns in half and brush with melted butter. Toast on baking sheet for 3-4 minutes.
  6. Place BBQ chicken mixture on the bottom half of each slider bun, top with coleslaw, pickle, and red onion if using.
  7. Crown each slider with the top bun and press gently. Wrap assembled sliders in aluminum foil and warm in the oven for 2-3 minutes.

Notes

You can prepare the chicken mixture ahead of time for quick assembly during gatherings.
