- 4 boneless, skinless chicken breasts
- 1 cup cherry tomatoes, halved
- 1 cup spinach leaves
- 1 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add the chicken breasts and sear until golden brown on both sides.
- Remove the chicken and set aside. In the same skillet, add cherry tomatoes and spinach, cooking until spinach wilts.
- Place the chicken back in the skillet, sprinkle with Italian seasoning, salt, and pepper.
- Pour the mixture into a baking dish and top with mozzarella and parmesan cheese.
- Bake in the oven for 25-30 minutes or until chicken is cooked through and cheese is bubbly.
- Let it cool for a few minutes before serving.
Notes
For extra flavor, marinate the chicken in olive oil, garlic, and herbs for a few hours before cooking. This dish is also great with garlic bread or a fresh salad.
