Description

A comforting and delicious dish that brings together the flavors of Italy with chicken, veggies, and gooey cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach leaves
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the chicken breasts and sear until golden brown on both sides.
  4. Remove the chicken and set aside. In the same skillet, add cherry tomatoes and spinach, cooking until spinach wilts.
  5. Place the chicken back in the skillet, sprinkle with Italian seasoning, salt, and pepper.
  6. Pour the mixture into a baking dish and top with mozzarella and parmesan cheese.
  7. Bake in the oven for 25-30 minutes or until chicken is cooked through and cheese is bubbly.
  8. Let it cool for a few minutes before serving.

Notes

For extra flavor, marinate the chicken in olive oil, garlic, and herbs for a few hours before cooking. This dish is also great with garlic bread or a fresh salad.
