This baked chicken legs recipe is quick, simple, and tasty with crispy skin and juicy meat.

- 8 skin-on chicken drumsticks (approx. 2 pounds total weight)
- 3 tbsp olive oil
- 1 tbsp sea salt (or 1 tsp for less salt)
- ½ tsp black pepper
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp smoked or sweet paprika
- 1 tbsp dry mustard (optional)
Instructions
- Preheat your oven to 400°F and line a baking sheet with aluminum foil or parchment paper.
- In a small mixing bowl, combine garlic powder, onion powder, paprika, salt, and black pepper.
- Add olive oil to the spice mixture and blend well.
- Allow the chicken legs to come to room temperature.
- Coat the chicken legs with the seasoning oil mixture.
- Arrange the chicken legs on the lined baking sheet with space in between each.
- Bake for 30 minutes on the middle rack at 400°F.
- Brush the legs with the oil from the tray and bake for an additional 5-10 minutes until crispy.
Notes
Pat the skin dry before seasoning for extra crispiness. Use an instant-read thermometer to ensure the internal temperature reaches 165°F.
