Description

This baked chicken legs recipe is quick, simple, and tasty with crispy skin and juicy meat.


Ingredients

  • 8 skin-on chicken drumsticks (approx. 2 pounds total weight)
  • 3 tbsp olive oil
  • 1 tbsp sea salt (or 1 tsp for less salt)
  • ½ tsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp smoked or sweet paprika
  • 1 tbsp dry mustard (optional)

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with aluminum foil or parchment paper.
  2. In a small mixing bowl, combine garlic powder, onion powder, paprika, salt, and black pepper.
  3. Add olive oil to the spice mixture and blend well.
  4. Allow the chicken legs to come to room temperature.
  5. Coat the chicken legs with the seasoning oil mixture.
  6. Arrange the chicken legs on the lined baking sheet with space in between each.
  7. Bake for 30 minutes on the middle rack at 400°F.
  8. Brush the legs with the oil from the tray and bake for an additional 5-10 minutes until crispy.

Notes

Pat the skin dry before seasoning for extra crispiness. Use an instant-read thermometer to ensure the internal temperature reaches 165°F.
