- 4 Chicken breasts
- 2 cups Spinach
- 2 cloves Garlic, minced
- 1/2 cup Sun-dried tomatoes
- 8 oz Cream cheese
- 1 cup Mozzarella cheese, shredded
- 1 tsp Italian seasoning
- Salt, to taste
- Pepper, to taste
- Pasta or rice (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook chicken breasts until golden and cooked through.
- Remove the chicken from the skillet and sauté garlic in the same skillet until fragrant.
- Add spinach and sun-dried tomatoes to the skillet, cooking until the spinach wilts.
- Stir in cream cheese until it melts and combines with the other ingredients.
- Slice the cooked chicken and add it back to the skillet, mixing well.
- Pour the mixture into a casserole dish, then top with mozzarella cheese and Italian seasoning.
- Bake for 25-30 minutes or until the cheese is bubbly and golden.
Notes
Serve with pasta or rice for a filling meal. Add a green salad to complete the dish.
