- 2 cups cooked chicken, shredded
- 2 cups spinach, chopped
- 1 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 1 cup cream or sour cream
- 1 cup shredded mozzarella cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup breadcrumbs
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the cooked chicken, spinach, sun-dried tomatoes, garlic, cream or sour cream, mozzarella cheese, Italian seasoning, salt, and pepper.
- Transfer the mixture to a greased baking dish.
- In a small bowl, mix breadcrumbs with olive oil until evenly coated.
- Sprinkle the breadcrumb mixture over the casserole.
- Bake for 25-30 minutes or until the top is golden and bubbly.
- Let it cool for a few minutes before serving.
Notes
Use leftover chicken for a quicker preparation. Ensure to squeeze moisture from thawed spinach for best results.
