- 2 lbs (900g) boneless skinless chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional)
- 1 tablespoon brown sugar
- 1 teaspoon smoked paprika
- 2 tablespoons fresh lemon juice
- 2 cloves garlic, minced
Instructions
- Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper and optionally place a wire cooling rack on top.
- Remove chicken thighs from refrigerator 15-20 minutes before cooking and pat completely dry with paper towels.
- In a large mixing bowl, combine garlic powder, onion powder, paprika, oregano, thyme, salt, black pepper, cayenne pepper, brown sugar, and smoked paprika. Whisk until evenly distributed.
- Add chicken thighs to the bowl with the seasoning mixture, drizzle with olive oil and lemon juice, and add minced garlic. Massage the seasonings into the meat.
- Place seasoned chicken thighs on the prepared baking sheet, ensuring they don’t overlap.
- Bake for 25-30 minutes until the internal temperature reaches 165°F (74°C), optionally broil for the last 2-3 minutes for extra crispiness.
- Remove from oven and let rest for 5 minutes before serving.
Notes
For BBQ flavor, brush chicken with barbecue sauce in the last 5 minutes of baking. Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months.
