Description

Juicy, tender baked boneless skinless chicken thighs that are easy to prepare and full of flavor, perfect for weeknight dinners.


Ingredients

  • 2 lbs (900g) boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper and optionally place a wire cooling rack on top.
  2. Remove chicken thighs from refrigerator 15-20 minutes before cooking and pat completely dry with paper towels.
  3. In a large mixing bowl, combine garlic powder, onion powder, paprika, oregano, thyme, salt, black pepper, cayenne pepper, brown sugar, and smoked paprika. Whisk until evenly distributed.
  4. Add chicken thighs to the bowl with the seasoning mixture, drizzle with olive oil and lemon juice, and add minced garlic. Massage the seasonings into the meat.
  5. Place seasoned chicken thighs on the prepared baking sheet, ensuring they don’t overlap.
  6. Bake for 25-30 minutes until the internal temperature reaches 165°F (74°C), optionally broil for the last 2-3 minutes for extra crispiness.
  7. Remove from oven and let rest for 5 minutes before serving.

Notes

For BBQ flavor, brush chicken with barbecue sauce in the last 5 minutes of baking. Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months.
