Description

A refreshing and healthy dish combining creamy avocado, tender chicken, and crisp lettuce in easy-to-make wraps.


Ingredients

  • 3 cups cooked chicken breast, diced
  • 2 large ripe avocados, diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup celery, finely diced
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 head butter lettuce or Boston lettuce, leaves separated
  • 1/2 cup cherry tomatoes, halved (optional)
  • 1/4 cup crumbled feta cheese (optional)

Instructions

  1. In a large mixing bowl, add your diced cooked chicken.
  2. Cut the avocados in half, remove the pits, and scoop the flesh into the bowl with the chicken. Mash the avocados gently.
  3. Fold in the finely diced red onion and celery.
  4. Add lime juice, olive oil, garlic powder, cumin, salt, pepper, and paprika to the mixture.
  5. Fold in chopped cilantro for flavor.
  6. Carefully separate and rinse the lettuce leaves.
  7. Assemble the wraps by placing about 1/4 cup of the avocado chicken salad mixture into each lettuce cup and top with optional cherry tomatoes and feta cheese.

Notes

For the best texture, dice chicken into uniform pieces. Use ripe avocados and consider chilling the wraps for a refreshing meal.
